Lemon Sherbet Squares
Lemon Sherbet Square

Ingredients:

For the base:
1 cup of oats
1 cup of almonds

1.5 cups of medjool dates

For the topping:
Juice of a lemon
1 cup of macadamia nuts
1 cup of coconut oil


Method:

Blend all the ingredients for the base until the oats are almost smooth and press the mixture down into a baking tray. Place in the fridge while you make the topping. Blend all the ingredients for the topping until completely smooth then pour over the base and put it back in the fridge for an hour to firm up. Cut into squares and keep in the fridge until serving.
