Ingredients:

180g spelt flour (plus extra for rolling)
0.5 tsp baking powder
2 tsp cinnamon
2 tsp ground ginger
100g honey
100g extra virgin olive oil

Method:

Pre-heat the oven to 180 degrees celsius.
Simply weigh out and mix thoroughly all the ingredients and roll the dough into a big ball. Place the ball on a lightly floured surface and roll out until its about 1.5cm thick.
Use Christmassy cutters to cut your cookies into your desired shapes and place on a lined baking  tray, then bake in the oven for 10-12 minutes. You will need to watch them carefully to make sure they don’t burn, as I found that different shaped cookies caught at different speeds.
Leave them to cool before removing from the tray.
