This is so simple you don't really need a recipe, but it is so good that I had to share it anyway. I made guacamole at the weekend to go with my Spicy Bean Burgers (which I will post the recipe for soon) and since then I have had it with almost every meal.... It is delicious in wraps for lunch, with salad, as a dip... The creamy avocado balances perfectly with the sharp lime, and the crunchy chilli adds a subtle heat.
Avocados are a real miracle food - they are a good source of oleic acid which plays an important role in cardiovascular health, as well as vitamin E which protects skin from UV rays, environmental pollution and has anti-ageing properties.
Makes one bowl of guacamole
1 cup of chopped coriander
Juice of 0.5 - 1 lemon
2 tbsp olive oïl
Finely chopped jalapeno (to taste)
Peel and de-stone the avocadoes, then mash them with a fork. Add all ingredients to a bowl and mix together.
