It is so cold this week that I am really struggling to drag myself out of bed in the mornings. Whilst the promise of a warm bowl of porridge is undeniably tempting, right now there isn't much that can trump a few minutes more under the duvet. In anticipation of an early start the simplest thing you can do is fill a jam jar with a few delicious ingredients before you go to bed. While you dream they will all mix and mingle so that you wake up to a creamy healthy breakfast that you can simply grab from the fridge as you walk out the door.
You make Bircher Muesli by soaking oats overnight in milk or water so that by the morning they are soft to eat, easier to digest and all the goodness they contain is more easily absorbed by your hard working body. It is a way of boosting the nutritional value of your meal with almost no extra effort on your part, plus it creates one of the most delicious, convenient and versatile breakfasts ever. The beauty of Bircher Muesli is that you can use absolutely any combination of fruit, nuts, seeds, grains, milks and fancy extras to make something different everyday. This time I used regular oats soaked in nut milk with grated apple as a natural sweetener and and juicy mango for a tropical hit of colour and vitamin C.
2 cups of chopped mango
1 cup of oats
1 cup of almond milk
1 tbsp of flax seeds
1 tbsp of hazelnuts
1 tbsp of lucuma powder (optional)
Grate the apple and mix it with the oats, flax seeds, lucuma and almond milk. You can either leave this to soak overnight, and in the morning layer the oat mixture with the chopped mango into two jam jars, or layer it straight away and let it soak up all the goodness ready in the jars. Either way, top it with chopped hazelnut for a delicious crunchy finish.
