Exciting things have been in the pipelines here at The Herb Diaries for a while now and I am so excited to finally share the news. As of September, I will be heading out to a tropical paradise in Costa Rica to do an internship and my Yoga Teacher Training at Anamaya Resort! I will of course continue to write my blog and share healthy plant based recipes, but photos will be of waterfalls, sandy beaches, salt water infinity pools, and the incredible yoga deck looking out over the Pacific.
I literally could not be more excited - Costa Rica sounds like the most vibrant and beautiful country. It is home to the most incredible wildlife, is the eco-capital of Central America, and I even read somewhere that it is the birthplace of the smoothie which (whether it is true or not) sounds pretty dreamy to me.
Other than my month of learning, living, breathing yoga, I will be working as a media intern for the resort, updating their website, social media, and even spending some time working out on their farm where they grow all their own amazing fresh produce.
I cannot wait to live in paradise, to meet fascinating new people, to wake up every day to views of the ocean, to practice yoga outdoors in the salty sea breeze, to wake-up and go to sleep with the sun, to have time to think, to hear the tropical rain on the roof, to eat only the freshest and most wholesome food, to truly discover the Costa Rican pura vida.
It will be my first time in Costa Rica, so rather than tell you now about everything I have read and how I imagine it to be, I will wait until I get there. So stay tuned for future posts on yoga, travel, vegetarian food and hopefully much more - I hope you will all join me in my adventures as I cross the Atlantic to learn more about yoga, natural living and (obviously) food!
