Life has been crazy busy ever since I got home from Costa Rica, and sadly when that happens the first thing to slip is creating recipes. I am still thinking about food 110% of the time and cooking as much as possible, but with a full time job, teaching yoga three times a week, trying to maintain my personal practice and seeing friends and family I just don't have the time I had as a student to spend editing photos and writing up methods. I did spend a whole day last weekend working on things for the blog, so if you like the sound of Vegan Caesar Salad with Crunchy Chickpeas and Creamy Avocado, Protein Packed Buckwheat Breakfast Bars and Harissa Roasted Aubergine with Herby Courgette and Chickpeas then you're in the right place. For anyone who can relate to my busy lifestyle, juicing is a quick and easy way to get more natural goodness into your action packed day. This is definitely more of an inspiration than a recipe, but it is one of my favourites nonetheless. Not only does this juice taste delicious, it contains a really healing combination of ingredients which is just what we need at this time of year. Spring might be just around the corner, but plenty of people are still battling nasty colds and flu! Oranges, carrots and lemons are packed full of immune boosting vitamin C and anti-inflammatory ginger is super soothing for nausea and stomach cramps, so this is great for fighting off any lingering winter bugs.
Ingredients (serves 2):
Thumb sized piece of ginger
1 tsp ground turmeric/small piece of fresh turmeric (optional)
Simply wash and peel all the ingredients before putting through the juicer. Enjoy!
